Sydney’s Italian dining institution, Machiavelli, is now open on Saturdays

Often cited as one of the best Italian restaurants in Sydney, Machiavelli Ristorante Italiano has edged forward with something the institution has never before done. After three decades of serving high flying corporates, visiting celebrities, and most famously Australia’s political elite, the Italian restaurant is now extending trading hours to include Saturday nights.

Historically, the restaurant has been closed on weekends but a spike in demand from regulars has pushed for this change.

“There were many reasons for this decision, including a lot of diners requesting it”, said General Manager Rosanna Riccio. “Google Analytics also showed high traffic to our website on Saturdays, and the changing face of Sydney CBD and rejuvenation of its nightlife made us want to be a part of that movement”

While Machiavelli has its own tradition to stick too, plenty of additional changes have been happening where it matters most: the menu. The celebrated list of pastas and proteins has welcomed former limited edition specials like Fusilli Beef Cheek and Ravioli alla Veneziana to the official menu after becoming clear favourites with the restaurant’s regulars.

As for what dishes to expect in the future? Machiavelli are currently preparing to reveal a few truffle dishes to nod to the winter season, as well as specials like a Moreton Bay Bugs Pappardelle, which Riccio says have proven so popular it might makes its way onto the actual menu.

Machiavelli is now open from 6pm every Saturday.
