Sydney’s iconic Icebergs Dining is popping up at Splendour in the Grass

It looks like Splendour in the Grass are going ahead with their successful pop-up dining experience series, with the forthcoming 2019 iteration of the famous three-day festival set to welcome restaurateur Maurice Terzini and his iconic Icebergs Dining Room & Bar.

The historic Sydney restaurant will follow in the footsteps of The Unicorn by offering Splendour-goers a lovingly recreated and reimagined version of Icebergs as a 100-seat pop-up restaurant with an exclusive menu created by Executive Chef Monty Koludrovic and the team behind Three Blue Ducks.

The three course set menu will take two hours and feature a pairing with innovative drinks, focusing heavily on Italian flavours. Dishes available will include nodini di mozzarella, a decadent Yarra Valley caviar croccante, grilled pickled octopus, Randall Family Koshi risotto with saffron, crab and celeriac, Koji grilled lamb neck, smoked garlic, sorrel and fermented chilli salmoriglio, twice cooked free range chicken with ginger sauce, a pea, herb and almond salad to pair, and a tableside candied macadamia and chocolate tiramisu to wrap up. Vegetarian and vegan options will also be available.

In terms of drinks, expect a series of “Smirnoff Infusions” as well as drinks curated by Icebergs’ Sommelier James Hird and Matthew Whiley of Scout Sydney. Beverages using “Organics” by Red Bull soft drinks will also be available at The Icebergs Bar, while beer from Belgium’s iconic Hoegaarden brewery will also be featured.

Icebergs’ will also be introducing their spin-off Italo Dining & Disco Club to Splendour on the Sunday from 11pm to 2am, capping the festival with an Italian-style dance party for those who want to throw shapes after all the main action is done and dusted.

Sittings for Icebergs Dining are set for Friday 7pm, and 12pm, 3pm and 6pm on both the Saturday and Sunday. The set menu costs $148.50pp and registration for bookings is now open at visacheckout.com.au
